Ingredients

SPICY AND SPICY PARMESAN CHICKEN

  • 3 chicken breasts, pounded (15 oz)
  • 2 tablespoons coconut flour
  • 2 beaten eggs
  • 3 bags Hot and Spicy Quest Chipsfinely crushed
  • ⅓ cup finely grated Parmesan cheese
  • 6 tablespoons spicy marinara sauce
  • ½ cup grated mozzarella cheese
  • Fresh basil to cover
  • Crushed red pepper to cover

Method

  1. Preheat the oven to 425 F and prepare a baking sheet with parchment paper.
  2. Pat the chicken breast dry with a paper towel. Place the coconut flour in a shallow plate or bowl, the eggs in a shallow bowl, and the chips and parmesan in a shallow bowl.
  3. Coat each chicken breast with coconut flour and then top with the beaten eggs.
  4. Coat thinly with the crushed chip and Parmesan mixture until completely coated on all sides and place on the baking sheet.
  5. Bake for 20 minutes, remove from oven and pour marinara sauce over chicken breast and top with mozzarella cheese.
  6. Return to oven for 5 minutes or until cooked through.
  7. Serve with fresh basil and crushed red pepper.
