Healthy fall recipes include pumpkin, turkey, apples and more pumpkins. This time of year is full of tasty, affordable and accessible food.

I live in “FALL CENTRAL”, also known as New England, which is the place to celebrate fall. After many years in a windowless office, I am now taking in the brilliant colors of fall foliage as I write this. It is spectacular.

Fall food is also spectacular. I drive by farm stands with pumpkins, gourds and tons of apples. My favorite tomatoes are gone, but I won’t regret them for long.

I didn’t grow up eating pumpkins, but I’ve slowly developed a taste for them after a lot of trial and error. The best way to cook it is to roast it. The flavors become more intense and the texture becomes smooth and luxurious. I love roasted fall vegetables over a pile of arugula with a splash of vinegar.
